These are great for people who need an on-the-go type breakfast.

Peanut Butter Oatmeal Breakfast Bars

Ingredients
  • 1/2 cup mashed bananas, about 2 large super ripe bananas
  • 1/4 cup unsweetened applesauce
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter
Instructions
  1. Preheat oven to 350*F
  2. Prepare 8 x 8-inch casserole dish with parchment paper, non-stick foil or grease it up.
  3. In a bowl add mashed bananas and applesauce; mix well.
  4. Add brown sugar and mix well.
  5. Add egg, vanilla, salt, mix well.
  6. Add baking soda, flour & oats and mix well.
  7. Add chocolate chips and mix again.
  8. Spread mixture into prepared baking dish.
  9. Bake for 18 – 22 minutes or until a toothpick inserted into the middle comes out clean.
  10. Allow to cool in pan for 10 minutes then flip onto a wire rack. Allow to cool completely.
  11. Scoop peanut butter into a mug and microwave in 10 second cycles until peanut butter is melted and runny.
  12. Spoon peanut butter over cooled cake.
  13. Slice and serve immediately.
  14. These will keep for up to 5 days in an airtight container.

Healthy Oatmeal Cookies

Ingredients
  • 1/2 cup old-fashioned rolled oats
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/4 cup yogurt*
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 Tablespoons dark molasses*
  • 1/4 cup packed dark brown sugar
  • 1/4 cup mini chocolate chips
Instructions
  1. Preheat oven to 350F degrees. Line cookie sheet with parchment paper or silicone baking mat. Set aside.
  2. In a large bowl, mix together oats, flour, baking soda, cinnamon, ground cloves, and salt. Set aside. In a medium bowl, whisk together yogurt, applesauce, and vanilla. Stir. Mix in molasses and brown sugar until no sugar lumps remain.
  3. Make a well in the center of the dry ingredients and pour in the wet mixture. Gently mix together until *just* combined and no dry lumps of flour or oats remain. Do not overmix. Dough will be very sticky. Fold in the chocolate chips.
  4. With a spoon, drop cookies onto prepared cookie sheet, slightly flattening each mound. Bake for 10-11 minutes. Remove from oven and allow cookies to cool on a cookie rack. Cookies remain fresh and soft in an airtight container at room temperature for 5 days. Cookies freeze well.

Ingredients
  • 1 cup shortening
  • 2 cups brown sugar, packed
  • 3 eggs
  • 1 cup sour milk
  • 1 tsp. vanilla
  • 3 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 2 cups oats
  • 1 cup walnuts, chopped
  • 1 cup raisins
  • 1 cup chocolate chips
Instructions
  1. Heat oven to 350 degrees F. Grease cookie pans or line with parchment.
  2. In a large bowl, cream together shortening and sugar until fluffy. Add eggs, then stir in vanilla and sour milk.
  3. Combine flour, baking powder, baking soda, salt and cinnamon. Stir into creamed mixture.
  4. Stir in oats, walnuts, raisins and chocolate chips.
  5. Drop by spoonfuls onto cookie sheets.
  6. Bake 12 to 15 minutes.

Ingredients
  • 2 c. butter, softened
  • 2 c. packed brown sugar
  • 1 c. granulated sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 3 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt (optional)
  • 6 c. oatmeal
  • 2 c. raisins or chocolate chips or both!
  • chopped nuts - however much you want
Directions
  • Step 1 Heat oven to 350°F.
  • Step 2 Beat together butter, brown sugar and granulated sugar.
  • Step 3 Add eggs and vanilla. Beat well.
  • Step 4 Add flour, soda and salt.
  • Step 5 Stir in oatmeal and raisins (chips and nuts, too!)
  • Step 6 Drop by tablespoons on ungreased cookie sheet.
  • Step 7 Bake 10 to 12 minutes.
