This is so good! I've made it several times and hubby loves it. It's a really great dessert for when you have company.

Ingredients
  • 6 eggs
  • 3 cups milk
  • 1 (13 1/2 oz) can coconut milk
  • 1 cup sugar
  • 1/2 cup raisins
  • 1 Tbsp. vanilla
  • 1 1-lb. loaf French bread, cubed
  • 2 tsp. butter
  • 3 Tbsp. sugar
  • 2 tsp. cinnamon
  • Sauce:
  • 1 stick butter
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 2 Tbsp. spiced rum
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup pecans, chopped
  • 1/2 cup coconut
  • 1 tsp. vanilla
  • 1/2 tsp. lemon juice
Directions
  • Step 1 Whish together eggs, milk, coconut milk, sugar, vanilla and raisins. Stir in bread. Press it down to submerge. Let it set for about 45 minutes.
  • Step 2 Heat the oven to 350 degrees F. Grease a 9 x 13-inch pan with 2 tsp. butter. Pour the mixture into the pan. Bake 1 hour or until center is set. Let cool.
  • Step 3 Sauce: In saucepan, melt butter with brown sugar over medium heat. Whisk in cream, rum, cinnamon and salt. Simmer
  • Step 4 cook until thickened – about 5 minutes. Stir in remaining ingredients. Serve warm.
