This is great as a main dish pasta salad or leave out the meat and serve as a side salad.

Ingredients
  • 16 oz. package pasta (your choice), cooked and drained
  • 1 lb. ground beef, cooked and drained
  • 2 tomatoes, seeded and chopped
  • 1 1/2 cups whole kernel corn
  • 1 red bell pepper, chopped
  • 2 green onions, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups sharp cheddar cheese, shredded
  • 1 can sliced black olives
  • Dressing:
  • 1 1/4 cups sour cream
  • 1 cup mayonnaise
  • 1/2 cup salsa
  • 1/2 Tbsp. taco seasoning
  • 1/2 tsp. cumin
  • 2 cloves garlic, minced
Directions
  • Step 1 Combine the dressing ingredients. Refrigerate until needed.
  • Step 2 Combine all your salad ingredients. Mix in the dressing.
  • Step 3 Cover and chill until ready to serve.
