These are great for using up some leftover brisket. We have it as one of those easy meals when no one really wants to cook.

Ingredients
  • 20 large tortilla chips
  • 2 cups brisket, diced
  • 1 cup refried beans
  • 1/2 cup shredded Cheddar
  • 1/2 cup chopped green onions
  • 2 medium tomatoes, diced
Directions
  • Step 1 Arrange the tortilla chips on an oven proof platter or a cookie sheet.
  • Step 2 Spread the tortilla chips with refried beans.
  • Step 3 Sprinkle on the brisket and cheese.
  • Step 4 Heat in a 375 degree F. oven for about 10 minutes.
  • Step 5 Sprinkle on green onions and tomatoes. Serve.
  • Step 6 Note: I always add lots more cheese then the recipe calls for because we like it that way. I usually will have salsa and sour cream on the side.

With all the berries in the stores now, I thought this would be the perfect recipe to add to your menus.

Ingredients
  • 2 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/4 cup brown sugar
  • 1 egg
  • 1/2 cup oil
  • 2 tsp. vanilla
  • 1 cup buttermilk
  • 1 cup blueberries
  • 1 cup strawberries, chopped
  • 1 Tbsp. butter, melted
  • 1/3 cup sugar
  • 2 tsp. cinnamon
Directions
  • Step 1 Heat oven to 350 degrees F. Spray muffin pans.
  • Step 2 Whisk together the flour, baking soda, baking powder and salt.
  • Step 3 In a large bowl, combine the brown sugar, egg, oil, vanilla and buttermilk. Gradually mix in the flour.
  • Step 4 Fold in the blueberries and strawberries. Spoon batter into muffin pans – about 3/4ths full.
  • Step 5 Combine the melted butter, sugar and cinnamon. Sprinkle on muffins.
  • Step 6 Bake for 17 to 22 minutes or until a toothpick inserted in center comes out clean.

Want tacos but not the fuss? This is perfect. An easy casserole to put together that your family will love.

Ingredients
  • 1 (12-oz) package medium egg noodles
  • 1 lb ground beef
  • 1 (1-oz) package taco seasoning
  • 2/3 cup water
  • 1 (10-oz) can Rotel diced tomatoes and green chiles, undrained
  • 1 (10.75oz) can cheddar cheese soup
  • 16-oz sour cream
  • 2 cups shredded cheddar cheese
Directions
  • Step 1 Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
  • Step 2 Cook egg noodles according to package directions. Drain and set aside.
  • Step 3 Cook ground beef in a large skillet until no longer pink. Drain fat. Add taco seasoning and water to skillet and cook for 5 minutes. Set aside.
  • Step 4 In a large bowl, combine cooked taco meat, Rotel, cooked noodles, cheese soup, sour cream, and cheddar cheese. Mix until throughly combined.
  • Step 5 Spread mixture into prepared pan.
  • Step 6 Bake uncovered for 25 to 30 minutes, until bubbly.

This is a delicious salad for the summertime - or anytime for that matter.

Ingredients
  • 12 ounces salmon fillets
  • 2 tsp. garlic powder
  • 4 Tbsp. teriyaki sauce
  • 8 cups baby spinach, rinsed & drained
  • 1 pint grape tomatoes, sliced in half
  • 1 cup thinly sliced red onion
  • 1 cup thinly sliced yellow bell pepper
  • 3 ounces crumbled feta cheese
  • 2 cups blackberries, rinsed & dried
  • 1/4 cup soy nuts
  • 4 Tbsp. balsamic vinegar
Directions
  • Step 1 Preheat broiler on high heat.
  • Step 2 Line baking sheet with foil and spray with cooking spray.
  • Step 3 Arrange salmon fillets on baking sheet
  • Step 4 sprinkle on top with half the garlic powder and drizzle with half the teriyaki sauce.
  • Step 5 Broil 10 minutes, remove from oven and turn over fillets
  • Step 6 sprinkle with remaining garlic powder and teriyaki sauce. Broil 10 minutes longer or until cooked through.
  • Step 7 Combine spinach, tomatoes, onion and bell pepper in a large bowl and toss to mix.
  • Step 8 Carefully fold in feta cheese, blackberries and soy nuts.
  • Step 9 Divide salad among four plates and top with salmon fillets.
  • Step 10 Just before serving, drizzle with balsamic vinegar.

Ingredients
  • 1 banana, cut in chunks
  • 1/2 cup raspberries, rinsed & drained
  • 1/2 cup blueberries, rinsed & drained
  • 1/2 cup strawberries, rinsed & drained
  • 1/4 cup blackberries, rinsed & drained
  • 1 cup skim milk
  • 1 Tbsp. honey
  • 1/4 tsp. almond extract
  • 8 whole almonds, chopped
  • 1 cup ice cubes
Directions
  • Step 1 Line baking sheet with foil. Arrange banana slices and berries in a single layer and freeze until solid.
  • Step 2 Combine banana, berries, milk, honey, almond extract, chopped almonds and ice cubes in blender. Process until smooth and creamy.
  • Step 3 Divide into 2 glasses and serve.

It depends on who you ask as to whether to use provolone cheese or Cheez-Whiz. Personally, the provolone is the more traditional Cheesesteak.

Ingredients
  • 1/4 of a green bell pepper
  • 1/8 of a medium yellow onion
  • 2 tablespoons olive oil
  • 4-5 oz leftover steak
  • 1/3 cup shredded Provolone cheese
  • 1 small Italian baguette or hoagie roll (6-7 inches long)
Directions
  • Step 1 Slice pepper into 1/4″ wide by 3″ long julienne strips. Cut the onion into 1/4″ by 3″ julienne pieces. Place 1 tablespoon of oil in a saute pan and heat on high heat. Once hot, cook the pepper and onions just until soft, about 1 1/2 minutes. Remove from the pan and keep warm.
  • Step 2 Place the saute pan back on the stove, set on high heat and add 1 tablespoon of oil. Slice the cold leftover steak very thin, then sear very quickly in the pan on each side for 30 seconds. Stack the steak in the pan, then top with the shredded cheese. Cover the pan for about 45 seconds to melt the cheese.
  • Step 3 Slice the baguette in half horizontally. Place on a plate, then stack the meat with the melted cheese on top of the bottom piece of baguette. Add peppers and onions on top.

Ingredients
  • 2 1/2 cups white sugar
  • 1 1/2 cups butter softened
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 2 TBSP lemon juice
  • 1 TBSP lemon zest
  • Lemon Glaze:
  • 2 cups powdered sugar
  • 2 TBSP softened butter
  • 2 TBSP lemon juice
  • 2 tsp lemon zest + more for garnish on top about 1 TBSP total
  • 1 TBSP milk
Instructions
  1. Preheat oven to 350 degrees F. Grease and flour a bundt cake pan.
  2. Beat white sugar and 1 1/2 cups butter together in a bowl with an electric mixer until light and fluffy. Add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next.
  3. Combine flour, salt, and baking soda together in a bowl. Add 1/3 of the flour mixture to the butter mixture; mix well. Pour in 1/2 the buttermilk and beat until combined. Repeat adding the remaining flour mixture and buttermilk, beating well after each addition, and ending with the flour mixture. Stir lemon juice and zest into batter. Batter should be very smooth and have a silky texture- almost as if it was whipped. Pour batter into prepared cake pan.
  4. Reduce oven temperature to 325 degrees F and bake for 70-75 minutes. Cool in the pan for 10 minutes before removing to a cake platter or plate.
  5. How to make Lemon Glaze:
  6. Whisk powdered sugar, lemon juice, 2 tablespoons soft butter, lemon and lemon zest together in a bowl until glaze is smooth. Once cake has fully cooled, pour the glaze over the cake, letting some drizzle down the sides and into the center. Top with additional lemon zest, if desired.

I love to have ham for our Easter dinner – or any dinner for that matter.  Sometimes the oven is so busy that I just don’t have the room and then you find that time is running out.  So, let’s put it in the crock pot. It comes out just perfect!

Crock Pot Ham (Instant Pot)

Ingredients
  • 2-7 lb ham boneless or bone-in (I use a spiral ham)
  • 1 20- oz can sliced pineapple
  • 1/3 cup brown sugar
  • 1/2 tsp ground cloves
Instructions
  1. Cook your Ham in the Crock Pot:
  2. Place ham in the crock pot. Ham from grocery stores is pre-cooked, so if your ham doesn’t fit, simply cut a portion off and refrigerate it or freeze it for later use.
  3. Open the can of sliced pineapple and drain the juice out into a separate bowl. You will use all of the juice! Measure out your 1/3 cup of brown sugar and add it to the pineapple juice, whisking to dissolve. Add in the 1/2 tsp of ground cloves and whisk to combine.
  4. Arrange the slices of pineapple all over the surface of your ham and in between slices. Place candied cherries inside the pineapple. Pour the pineapple juice mixture on top.
  5. Replace the lid on the crock pot and cook on LOW for 3-5 hours. I had about 7-lbs of my 10lb ham in the crock pot and I cooked mine for 4 hours. It was super moist and had a lovely sweet flavor. Bone-In hams will take 5-6 hours to fully heat up. If you have a smaller, 2-4 lb ham, aim for 2 hours of cooking time.
  6. Cook Ham in the Instant Pot:
  7. Place ham in the Instant Pot. Ham from grocery stores is pre-cooked, so if your ham doesn’t fit, simply cut a portion off and refrigerate it or freeze it for later use.

  10. Place the lid on the Instant Pot and make sure pressure valve is closed. Select Manual high pressure and use the ham portion sizes below to set the appropriate time.
  11. lbs-4lbs boneless ham slices: 5-8 minutes in 3 qt or 6 qt Instant Pot
  12. -7lb boneless ham slices: 10-14 minutes in a 6 qt or 8 qt Instant Pot
  13. Smaller bone-in hams can be used in an 8-qt Instant Pot. Cook for 14-17 minutes
