Turkey Shepherd’s Pie with Sweet Potato Topping

I haven’t tried this yet, but my friend said it came out really good. She used leftover turkey instead of the ground turkey.   Hmmm. I think I have some leftover turkey in the freezer.

Turkey Shepherd’s Pie with Sweet Potato Topping

Ingredients
  • 1 1/2 lbs. sweet potatoes
  • 1 lb. russet potatoes
  • 3/4 cup whole kernel corn
  • 2 Tbsp. butter
  • 1 small sweet red pepper, chopped
  • 1 rib celery, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 lb. ground turkey
  • 3 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1/2 tsp. dried thyme
  • 1/4 tsp. black pepper
  • 1 can (14.5 ounces) chicken broth
  • 2 Tbsp. fresh chopped parsley
Instructions
  1. Cook the sweet potatoes and russet potatoes until done. Drain. Set aside.
  2. Heat oven to 375 degrees F.
  3. In large skillet, melt 1 Tbsp. butter over medium-high heat. Add corn, red pepper, celery, onion and garlic; saute for 3 minutes. Add ground turkey. Coo, breaking up clumps until no longer pink (about 3 minutes). Sprinkle with flour, 1 tsp. salt, thyme and 1/8 tsp. pepper; stir to blend. Gradually add 1 cup broth; cook until thickened – about 2 minutes. Stir in parsley.
  4. Spoon into 9-inch deep dish pie plate. Mash the potatoes together in a large bow. Mix in remaining broth, 1/2 tsp. salt and 1/8 tsp. pepper until smooth and blended.
  5. Mound potato mixture on top of turkey mixture, spreading to the edge of the dish. Melt remaining 1 tbsp. butter and brush over potato topping.
  6. Bake in 375 degree F. oven until filling is bubbly and potato topping is slightly browned – 30 to 35 minutes. Let stand 10 minutes before serving.
