Red White and Blue Cheesecake Cake

Ingredients
  • 2 (8 ounce) packages of cream cheese, room temperature
  • 2/3 cup granulated sugar
  • pinch of salt
  • 2 large eggs
  • 1/3 cup sour cream
  • 1/3 cup heavy whipping cream
  • 1 tsp. vanilla
  • Cake
  • 1/2 cup unsalted butter, plus some for cake pans and parchment
  • 2 cups flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup whole milk
  • 1 tsp. vanilla
  • food coloring – red and blue (See note)
  • Frosting
  • 1/2 cup unsalted butter, softened
  • 4 ounces cream cheese, room temperature
  • 5 cups powdered sugar
  • 1/4 tsp. salt
  • 3 to 4 Tbsp. whole milk
  • 1/2 tsp. vanilla
  • Sprinkles (optional)
Instructions
  1. Cheesecake Layer: Place a 9 x 13-inch pan on bottom rack of oven and fill it halfway with water. Place other rack in the center of the oven. Preheat to 325 degrees F. Spray a 9-inch springform pan; line it with parchment and spray it again. In a large bowl, using a mixer, beat the cream cheese until it is smooth and creamy – 1 to 2 minutes. Beat in sugar and salt. Add eggs one at a time, blending well after each addition. Now, mix in sour cream, whipping cream and vanilla. Beat until smooth. Pour into the pan and set in the oven. Bake for 45 minutes. It should be just firm and not jiggly. Set on a wire rack and cool – about 1 hour. Now, place the pan in the freezer and freeze completely – overnight is best.
  2. Cake: Heat oven to 350 degrees F. Spray 2 9-inch cake pans; line with parchment and spray again. In a medium bowl, whisk together flour, baking powder and salt. In a large bowl, beat together butter and sugar until well combined – about 2 minutes. Add eggs and beat well. On low, mix in the dry ingredients. Add milk and vanilla and mix just to combine. Scoop half the batter into another bowl. Color one with red and the other with blue. Make it a nice, deep color. Pour into prepared pans. Bake for 25 – 30 minutes or until a toothpick comes out clean. Let cool in pans on racks for 15 minutes. Turn out of pans onto racks and cool completely.
  3. Frosting: In a large bowl, beat together butter and cream cheese until smooth and creamy – about 1 minute. With mixer on low, beat in powdered sugar, 1 cup at a time. Add salt, milk and vanilla and beat until fluffy – about 3 minutes. Add a bit more milk if you want it creamier.
  4. Assembly: Put red cake layer on plate and spread a small amount of frosting on the top. Take frozen cheesecake out of pan and place on top of red layer. Spread a small amount of frosting on top. Now lay the blue cake layer on top of that. Now, you’ll want to cover the cake with a thin layer of icing and put it in the freezer to set – 1 to 2 hours. Frost the cake completely. Add the sprinkles if you’re using them.
  5. Refrigerate cake until ready to serve.
  6. Note: Gel paste colors will give you the best color. The icing is barely enough to cover the cake you may want to make extra.

  • 2 packages angel hair coleslaw mix
  • 2 cups unpeeled, chopped Granny Smith apples
  • 1 (5 oz) package Craisins
  • 1/2 cup chopped pecans
  • 1 (16 oz) container sour cream
  • 2 Tbsp. canola oil
  • 1/4 cup granulated sugar
Instructions
  1. Combine coleslaw, apples, cranberries and pecans in large bowl.
  2. Combine sour cream, oil and Spenda in small bowl; stir until well blended. Add to coleslaw mixture and toss to combine.
  3. Cover and chill for at least two hours.
  4. *To keep apples from turning color, place in colander and pour lemon-lime soda over apples; drain well.

Instructions
  1. Heat oven to 350 degrees F. Spray a 9 x 13-inch baking pan.
  2. Melt butter with semi-sweet chocolate over low heat. or in a double boiler.
  3. In bowl, whisk flour with baking powder and salt.
  4. In mixer bowl, beat eggs with sugar at med-high speed for 4 min. Beat in vanilla and espresso. Add flour; beat just to incorporate. On medium, beat in melted chocolate. Using a spoon, fold in the chocolate chips and walnuts.
  5. Pour in baking pan. Bake 1 hour. The center will be a bit jiggly. Do not overcook! Set on rack and cool completely. Cut into squares.

Ingredients
  • 1 lb. extra lean ground beef
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. garlic-pepper blend
  • 1/2 tsp. onion powder
  • 1/4 tsp. salt
  • 2 cups frozen snap peas, carrots, onions & mushrooms (from a 1 lb. bag)
  • 32 frozen steak fries (from a 28 ounce bag)
  • 4 frozen half ears of corn on the cob
  • 1/2 tsp. garlic-pepper blend
Instructions
  1. Heat oven to 450 degrees F. Cut 4, 18 x 12-inch pieces of heavy duty foil.
  2. Mix beef, Worcestershire sauce, garlic-pepper blend, onion powder and salt. Shape into 4 patties, about 1/4 inch thick.
  3. Place one patty on each foil sheet, about 2 inches from 12-inch side. Top each with 1/2 cup vegetables and 8 steak fries. Add one piece of corn. Divide the 1/2 tsp garlic-pepper blend between the 4 patties.
  4. Bring up 2 sides of foil to meet and make a 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  5. Place packets on cookie sheet. Bake 35 to 40 min. or until thermometer reads 160 degrees F.
  6. To serve, place each packet on a plate and carefully fold back foil.

Ingredients

  • 3/4 cup sugar
  • 3 Tbs unsalted butter
  • 1/2 cup milk
  • 1 cup all‐purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 lbs fresh peaches, peeled, pitted and cut into wedges OR 3 14.5 oz cans peaches in light syrup, drained
  • Topping Ingredients
  • 1/2 tsp salt
  • 1 cup sugar (if using fresh peaches) OR 1/2 cup sugar (if using canned peaches)
  • 1 Tbs cornstarch
  • 1 cup boiling water
Instructions
  1. Preheat an oven to 350 degrees F. Spray a 9 x 13 glass baking dish with non‐stick spray and gently lay the peach wedges in the dish, making sure none of them are on their edges. In the mixing bowl, cream together the sugar and butter with the back of the spoon until the mixture is nice and smooth. Add the milk, flour, baking powder and salt (sift these last three together to really do this right), mixing it all together until itʹs smooth again. With a rubber spatula, cover the peaches with the creamed mixture. This mixture might be a bit stiff, and thatʹs ok. Just make sure each peach wedge is covered by some of it.
  2. Topping:
  3. Mix the salt, the sugar and the cornstarch together. (If the cornstarch has been in the cupboard for a while, pitch it and get a new one!) Sprinkle this dry mixture over the filling you made before. Boil some water (really boil it, donʹt nuke it, and donʹt use just hot tap water either) and pour the measured water over the completed dish. Bake the completed cobbler in the preheated oven for one hour. Cool it for a while on a rack before chilling it in the fridge for at least a couple hours before serving.

  • 2 packages crescent roll dough
  • 1/2 lb. ground beef
  • 4 slices bacon, cooked and crumbled
  • 8 oz. bulk sausage
  • 6 thin slices sandwich ham
  • Canadian bacon
  • 2 cups shredded potatoes
  • 2 cups grated cheese
  • 6 eggs
  • 1/4 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 Tbsp. Parmesan
Instructions
  1. Heat oven to 375 degrees F. Spray a 10 x 15-inch pan.
  2. Combine eggs, milk, salt, pepper and Parmesan. Set aside.
  3. Brown sausage and ground beef together in skillet. Drain.
  4. Spread dough in pan. Pinch seams together. Push dough up the sides of the pan.
  5. Spread shredded potatoes over dough.
  6. Sprinkle meats over potatoes.
  7. Spread cheese over meat.
  8. Pour egg mixture on top. Sprinkle with Parmesan.
  9. Bake for 25 to 30 minutes or until eggs are set in the middle.
