That's NOT a bug on the cake - it's a small glob of icing.

Ingredients
  • 3 c. cake flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 c. good quality cocoa
  • 2 1/2 c. strong coffee
  • 1/2 c. butter, softened
  • 1/3 c. vegetable oil
  • 1 1/2 c. sugar
  • 1 1/2 c. brown sugar
  • 5 eggs
  • 1 tsp. vanilla
  • Icing
  • 2 3/4 c. confectioners sugar
  • 6 Tbsp. cocoa
  • 6 Tbsp. butter, softened
  • 5 Tbsp. evaporated milk
  • 1 tsp. vanilla
Directions
  • Step 1 Preheat oven to 350 degrees. Grease and flour three 9-inch cake pans.
  • Step 2 Sift flour, baking powder, baking soda & Salt.
  • Step 3 Whisk coffee and cocoa together until smooth.
  • Step 4 Cream butter and oil for 1 minute.
  • Step 5 Add both sugars
  • Step 6 beat 10 minutes.
  • Step 7 Add eggs
  • Step 8 beat 5 minutes.
  • Step 9 Add vanilla
  • Step 10 blend well.
  • Step 11 Alternately add coffee/cocoa mix and dry ingredients. Scrape the bowl often.
  • Step 12 Divide into pans.
  • Step 13 Bake for 25 minutes or until a toothpick inserted near the center comes out clean.
  • Step 14 Cool completely.
  • Step 15 Icing – Mix together confectioners sugar and cocoa.
  • Step 16 Cream the butter
  • Step 17 add the sugar/cocoa mix and the milk.
  • Step 18 Blend in vanilla.
  • Step 19 You may need to add a bit more milk to get the right consistency.
  • Step 20 I always double the icing recipe.

Since hubby and I aren't that crazy about the peppers, I usually leave them out.

Ingredients
  • 8 Tbsp. chili powder
  • 2 Tbsp. ground cumin
  • 2 tsp. dried oregano
  • 7 1/2 c. water plus 2/3 cup, divided use
  • 4 lb. beef chuck roast, trimmed of excess fat and cut into 1 inch cubes
  • 2 tsp. salt
  • 8 slices bacon, cut into 1/4 inch pieces
  • 1 medium onion, finely diced
  • 5 garlic cloves, minces
  • 4 jalapenos, cored, seeded and minced
  • 1 c. tomato sauce
  • 2 Tbsp. lime juice
  • 5 Tbsp. masa harina
  • 1/4 tsp. black pepper
  • 1 purple onion, diced, for garnish
  • cheddar cheese, grated, for garnish
Directions
  • Step 1 Mix chili powder, cumin and oregano in a small bowl. Stir in 1/2 c. water to form a thick paste
  • Step 2 set aside. Toss meat cubes with salt
  • Step 3 set aside.
  • Step 4 Fry bacon in large, heavy soup kettle or Dutch oven over medium-low heat for 10 minutes. Remove bacon with slotted spoon to paper towel lined plate. Discard fat from pot. Increase heat to medium high. Saute meat in 4 batches until well-browned on all sides, about 5 minutes per batch. Reduce heat to medium and add onions
  • Step 5 saute 5 to 6 minutes or until softened. Add garlic and jalapenos
  • Step 6 saute for 1 minute. Add chili paste and saute 2 to 3 minutes. Add reserved bacon, browned beef, tomato sauce, lime juice and 7 cups of water. Bring to a simmer. Continue to cook at a steady simmer until meat is tender and juices are dark, rich and starting to thicken – about 2 hours.
  • Step 7 Mix masa harina with 2/3 cup water in a small bowl to form a smooth paste. Increase heat to medium. Stir in paste and simmer 5 to 10 minutes, or until thickened. Adjust seasoning generously with salt and ground black pepper. Garnish with diced purple onion and grated cheddar cheese
  • Step 8 serve immediately.

This is great in the Fall when apples are plentiful.

  • Pancakes
  • 2 c. dry pancake mix
  • 1 tsp. cinnamon
  • 2 eggs
  • 1 c. unsweetened applesauce
  • 1 tsp. lemon juice
  • 1/2 c. milk
  • Sauteed Apples
  • 1/4 c. butter
  • 4 large apples - peeled, cored and sliced 1/4 inch thick
  • 2 tsp. cornstarch
  • 1/2 c. cold water
  • 1/2 c. brown sugar
  • 1/2 tsp. cinnamon
Directions
  • Step 1 Pancakes – Stir together pancake mix and cinnamon.
  • Step 2 Add eggs, applesauce, lemon juice and milk.
  • Step 3 Stir just until smooth.
  • Step 4 Heat a lightly oiled griddle over medium-high heat. Pour or scoop 1/4 c. for each pancake.
  • Step 5 Brown on both sides. Serve hot with sauteed apples.
  • Step 6 Sauteed Apples – In saucepan, melt butter over medium heat
  • Step 7 add apples. Cook, stirring constantly, until apples are tender – about 6 or 7 minutes.
  • Step 8 Dissolve cornstarch in cold water
  • Step 9 add to pan. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally.
  • Step 10 Remove from heat and serve warm.

I get lazy and usually use a mix. But, this recipe is fantastic.

  • 1/2 c. butter
  • 2/3 c. sugar
  • 2 eggs
  • 1 c. buttermilk
  • 1/2 tsp. baking soda
  • 1 c. cornmeal (I used yellow)
  • 1 c. flour
  • 1/2 tsp. salt
Directions
  • Step 1 Preheat oven to 375°F. Grease an 8″ square pan.
  • Step 2 Melt butter
  • Step 3 add sugar. Add eggs
  • Step 4 beat until blended.
  • Step 5 Combine buttermilk with baking soda. Stir into egg mixture.
  • Step 6 There will be lumps.
  • Step 7 Pour into pan.
  • Step 8 Bake for 30 to 40 minutes.

Ingredients
  • Rolls:
  • 2 1/4 tsp. yeast
  • 6 Tbsp. shortening
  • 1 c.+ 1 tsp. sugar
  • 3/4 c. yellow cake mix
  • 7 c. flour (plus more if needed)
  • 2 c. hot water
  • 2 eggs, beaten
  • 1 Tbsp. salt
  • Filling:
  • 2 sticks butter, softened
  • 2 c. brown sugar, packed
  • 2 Tbsp. cinnamon
  • 1 c. yellow cake mix
  • 1/8 c. rainbow sprinkles
  • Icing:
  • 2 Tbsp. butter, melted
  • 1/2 c. yellow cake mix
  • 1 tsp. vanilla
  • 3 c. powdered sugar
  • 2 Tbsp. milk
Directions
  • Step 1 Add yeast to a cup of lukewarm water and sprinkle in the teaspoon of sugar. Set aside for 5 minutes.
  • Step 2 Add shortening, 1 cup of sugar and salt to hot water in mixer bowl with the paddle attachment. Cool to lukewarm.
  • Step 3 Add cake mix and 2 c. flour. Mix until smooth.
  • Step 4 Add yeast and mix again until smooth
  • Step 5 add the beaten eggs.
  • Step 6 Stir in remaining flour until no more can be mixed in. Knead until smooth and satin. Make sure it doesn’t stick to your hands.
  • Step 7 Cover and rise for 30 minutes.
  • Step 8 Roll into rectangle – the wider the rectangle, the bigger the rolls.
  • Step 9 Spread with butter
  • Step 10 sprinkle with brown sugar, cake mix, cinnamon and sprinkles.
  • Step 11 Roll up from the long side
  • Step 12 seal ends. Cut into 12 pieces. Place in well greased pans. Cover. Let rise for 30 minutes or until doubled.
  • Step 13 Bake at 425°F for 15 minutes. Reduce heat to 350 and bake for 10 minutes more or until golden brown.
  • Step 14 Mix the icing ingredients, adding enough milk to desired consistency. Frost while warm for a glaze, or cool rolls for a thick icing.

Ingredients
  • 1 (15 oz) can solid pack pumpkin
  • 4 eggs
  • 2/3 c. water
  • 1 c. vegetable oil
  • 3 c. sugar
  • 3 1/2 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/2 tsp. ground cloves
  • 1/4 tsp. ground ginger
Directions
  • Step 1 Preheat oven to 350°F. Grease and flour three 7 x 3 inch loaf pans.
  • Step 2 In a large bowl, mix together pumpkin, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until blended. Pour into the prepared pans.
  • Step 3 Bake for about 50 to 60 minutes. Loaves are done when toothpick inserted in the center comes out clean.

Warm gingerbread with butter. Is there anything better?

Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 cup molasses
  • 2 1/2 cup flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. ginger
  • 1 cup hot water
Directions
  • Step 1 Cream butter
  • Step 2 gradually add sugar, mixing well. Add egg and molasses, mixing well.
  • Step 3 Combine dry ingredients
  • Step 4 add to the creamed mixture alternately with the hot water – beginning and ending with the flour mixture – beat well after each addition.
  • Step 5 Pour batter into lightly greased and floured 9-inch square pan.
  • Step 6 Bake at 350 degrees for 35-40 minutes or until a wooden pick inserted in center comes out clean.

I just love scallops but sometimes when they're deep fried, they're just too greasy. This recipe avoids all that.

Ingredients
  • 1 lb. scallops
  • 6 Tbsp. egg substitute OR
  • 2 eggs and 2 Tbsp. water
  • bread crumbs seasoned as you want
  • olive oil spray
Directions
  • Step 1 Rinse scallops and pat dry.
  • Step 2 Get your eggs ready in one bowl and your breadcrumbs with seasonings in a second bowl. Dip your scallops in egg and then bread crumbs. Arrange in greased pan. Spray lightly with olive oil spray and let set for 30 minutes.
  • Step 3 Bake at 500°F for about 10 minutes or until opaque and lightly browned.

  • 1 1/2 c. graham cracker crumbs
  • 3 Tbsp. sugar
  • 1/3 c. butter, melted
  • 4 packages (8 oz. each) cream cheese, softened
  • 1 c. sugar
  • 1 tsp. vanilla
  • 4 eggs
Directions
  • Step 1 Heat oven to 350°F.
  • Step 2 Mix graham cracker crumbs, 3 Tbsp. sugar and butter
  • Step 3 press into the bottom of a 9-inch springform pan.
  • Step 4 Beat cream cheese, 1 c. sugar and vanilla until blended. Add eggs
  • Step 5 mixing on low speed until blended. Pour over crust.
  • Step 6 Bake for 55 minutes or until center is almost set. Loosen cake from rim
  • Step 7 cool BEFORE removing rim. Refrigerate for at least 4 hours before serving.
